A unique winery

We follow the motto of Luis Sanz Busto, "antes uvas que cubas" what it means “would rather grapes than barrells”. Grapes are harvested by hand at the optimum moment of maturation of each of the plots.

The grapes are transported in small boxes up to 12 kg to ensure the integrity of the fruit and the fact that the plots are located just meters away to the winery, the grapes arrive in optimal conditions to the selection table.

Each of the plots are harvested and vinified separately, in order to obtain the maximum expression of the peculiarities of each one of them.

The must is fermented with natural yeasts, which come from our vineyards, at a controlled temperature.

After the alcoholic fermentation, the wines make the aging in American oak barrels, mainly, between one and two years old. We work with different toneleries in order to give more complexity to the wines.

Barrel Aging

The aging time in the barrels for us is a means to an end, not an end in itself, it comes first always a balance between the aromas provided by the oak and the primary aromas of the grapes.

Wines with great aging potential, with capacity to surpass the course of time. Silky, complex, elegant.
